水晶月餅
Jelly Mooncake

家里的 DoReMi一直吵著要做月餅。兩年沒有做了。這次要好好的記錄下來。

用料/Ingredients:

餡
a)25g 糖 , 150ml 水 , 1/2 茶匙 鹽, 2片班蘭葉 ,150g 蓮蓉餡, 2 1/2 茶匙即溶燕菜精
Filling
a)25g Sugar, 2 1/2tsp Agar-agar power, 150 ml Water, 1/2tsp Salt, 2pcs Pandan Leaves , 150g Lotus Paste

1)首先小火煮(a) 至溶解。
Cook over low heat & mix (a) slowly until paste dissolves throughly
2) 150ml 椰漿 加 1/2茶匙玉米粉拌均勻后,慢慢加入(1)中。煮滾后熄火。
150ml coconut milk mix with 1/2tsp cornflour,slowly mix in (1). Bring to another boil & turn off heat immediately.

3)把餡料倒入杯模,等它凝固。
Pour into small tart mould and allow to set completely.

水晶外皮料/JELLY SKIN INGREDIENTS:
(A) 沙谷米做法 / To prepare sago balls:

1)把2湯匙有色沙谷米放進滾水中不加蓋煮10分鐘后,加蓋熄火燜30分鐘。接著濾干水待用。
Boil water and add in 2tbsp coloured sago balls, simmer uncovered for 10 minutes. Cover it keep aside 30 minutes.Drain in a colander.

(b) 皮料/JELLY SKIN
b) 400ml 水, 2 1/2茶匙即溶燕菜精,1/2茶匙鹽,70g糖
班蘭葉 2片。慢火攪拌煮至溶解后,加入(a)和50ml 椰漿。慢慢煮至起泡即熄火。
400ml Water, 2 1/2tsp instant agar-agar powder, 1/2tsp salt,70g sugar, 2pcs Pandan leaves.Low heat mix well and mix in (a) & 50ml coconut milk stirring continuously with a hand whisk untill the mixture starts to bubble.

制作月餅 / To assemble mooncake:
1)倒少許的皮料到月餅模里,滴入少許顏色素,用 牙簽稍微攪成云石紋,待冷卻至半凝固后,加入少許的熱皮料。
Pour a lettle mooncake jelly skin mixture into a mooncake mould. Drip a little colouring & swirl with toothpick to create a marble effect. Allow to cool untill almost set. Add alittle hot mixture in to mould.

2)馬上把蓮蓉餡料放進月餅模中間,再倒入皮料覆蓋餡料,待凝固。
Place a lotus paste filling in the center of the mould,top up with jelly skin mixture. Allow to set completely.
